Ingredients
1 tbsp extra virgin olive oil
2 cloves garlic, minced finely
1/2 medium white onion, diced
1/2 cup bell peppers, diced
1/4 cup jalapeño, seeded and diced
6 cups reduced-sodium chicken broth
14.5-oz can fire-roasted tomatoes
1 lb boneless skinless chicken breast
1 tsp sea salt
1/2 tsp black pepper
1 tsp cumin
1/8 tsp chili powder
Instructions
Heat olive oil in a large stockpot over medium heat.
Add onion, bell peppers, and jalapeños, sautéing for 5 minutes until soft.
Stir in minced garlic and cook for 1 minute until fragrant.
Pour in the fire-roasted tomatoes and chicken broth.
Stir in the cumin, chili powder, salt, and black pepper.
