Description

This flour-free keto spinach wrap is a nutritious and versatile alternative to traditional tortillas. Made with just three whole-food ingredients—fresh spinach, eggs, and a touch of salt—these wraps are perfect for anyone following a ketogenic or gluten-free diet. They are thin, pliable, and provide a high-protein base for your favorite healthy sandwiches, making them an excellent choice for a quick lunch or snack without the heavy bloat of refined grains.


Ingredients

1.5 cups fresh spinach, firmly packed
3 large eggs, room temperature
0.5 tsp Himalayan salt
Small amount of oil for the skillet


Instructions

Wash the fresh spinach leaves thoroughly and pat them dry.
Crack the eggs into a high-speed blender.
Add the spinach and Himalayan salt into the blender with the eggs.
Blend on high speed until the mixture is completely liquified.
Let the batter rest for 5 minutes to allow air bubbles to subside.
Heat a non-stick skillet over medium-low heat and lightly grease with oil.
Pour half of the batter into the center, tilting the pan to coat the bottom evenly.
Cook for approximately 2 minutes until edges pull away and the center is set.
Carefully flip and cook for an additional 30 seconds.
Remove from heat and repeat for the second wrap.

Notes

Ensure your skillet is truly non-stick to prevent tearing. For best results, use a high-quality non-stick pan. You can store these in the refrigerator for up to 3 days or freeze them with parchment paper between them.
