Ingredients

2 large sweet potatoes, peeled and cut into 1-inch cubes
1 large head of broccoli, cut into bite-sized florets
8 large cremini or button mushrooms, stems removed
3 tablespoons extra virgin olive oil
2 cloves garlic, minced
1/2 cup panko breadcrumbs (ensure vegan)
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
Salt and black pepper to taste
Fresh parsley for garnish
Lemon wedges for serving


Instructions

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a large bowl, toss the sweet potato cubes and broccoli florets with 2 tablespoons of olive oil, salt, and pepper until evenly coated.
Spread the sweet potatoes and broccoli out on the baking sheet, leaving room for the mushrooms.
In a small bowl, mix the breadcrumbs, minced garlic, remaining olive oil, oregano, and smoked paprika.
Stuff each mushroom cap with the breadcrumb mixture and place them onto the baking sheet alongside the other vegetables.
Roast for 25 to 30 minutes, or until the sweet potatoes are tender, the broccoli is crisp-tender with golden edges, and the mushrooms are juicy and browned.
Remove from the oven, garnish with fresh parsley, and serve immediately with a squeeze of fresh lemon.

Notes
