Ingredients

2 large sweet potatoes, halved
3 cups broccoli florets
6 large cremini mushrooms, stems removed
3 tbsp extra virgin olive oil
1/4 tsp garlic powder
1/4 tsp smoked paprika
1 cup vegan cheese shreds
Salt and pepper to taste
1/2 lemon, juiced


Instructions

Preheat your oven to 400 degrees Fahrenheit.
Clean mushrooms with a damp cloth and remove stems, setting caps aside.
Place sweet potato halves on a parchment-lined baking sheet.
Toss broccoli florets with 2 tbsp olive oil, salt, pepper, garlic powder, and smoked paprika.
Arrange broccoli on the baking sheet alongside the potatoes.
Fill mushroom caps with vegan cheese and place on the same tray.
Drizzle remaining olive oil over the mushrooms.
Roast for 30 minutes until vegetables are tender and golden.
Remove from oven, squeeze fresh lemon juice over the broccoli, and serve.
