Description

These vegan lemon bars are a zesty, buttery, and refreshing treat that perfectly mimics the classic citrus dessert without any dairy or animal products. Ingredients

1/2 cup vegan butter, melted
1/4 cup white sugar
1 tsp vanilla extract
1/4 tsp salt
1 cup all-purpose flour
1 1/3 cups white sugar (for layer)
6 tbsp cornstarch
1 1/3 cups oat milk
1/2 cup fresh lemon juice
1/4 tsp ground turmeric (optional)


Instructions

Preheat oven to 350°F (175°C) and line an 8-inch square pan with parchment paper.
Whisk the melted vegan butter, sugar, vanilla, and salt in a medium bowl until smooth.
Fold in the flour until a soft, uniform dough forms.
Press the dough firmly into the prepared pan and bake for 15-18 minutes until edges are golden.
Whisk the sugar, cornstarch, and oat milk in a saucepan until smooth.
Heat over medium heat, stirring constantly until the mixture thickens.
Remove from heat, stir in the fresh lemon juice and optional turmeric.
Pour the lemon mixture over the baked crust and smooth the top.
Chill in the refrigerator until set, then slice into 9 squares.

Notes

Use high-quality stick vegan butter for the best crust texture. Oat milk is recommended for the richest curd. Ensure the lemon juice is freshly squeezed for a bright, authentic citrus flavor. Keep the bars refrigerated until serving to maintain their firm structure.
